چکیده

The main objective of the present study was to investigate the effects of the frying media and storage time on the fatty acid composition (FAC) and iodine value (IV) of deep-fat fried potato chips. The frying experiment was conducted at 180oC for five consecutive days. Six frying media were considered as the main treatments: refined, bleached, deodorized (RBD) palm olein (A), canola oil (C), RBD palm olein/sesame oil (AB, 1:1 w/w), RBD palm olein/canola oil (AC, 1:1, w/w), sesame oil/canola oil (BC, 1:1, w/w), and RBD palm olein/sesame oil/canola oil (ABC, 1:1:1, w/w/w). The initial degrees of unsaturation of the consumed oils, A, C, AB, AC, BC, and ABC, were 58.6, 94.0, 68.0, 72.2, 87.7, and 75.8 (g/100 g), respectively. The fatty acid analysis showed that there was a decrease in both the linolenic acid (C18:3) and linoleic acid (C18:2) contents, whereas the palmitic acid (C16:0) increased with a prolonged frying time. The chemical analysis showed that there was a significant (p < 0.05) difference in terms of the IV for each frying oil during the five consecutive days of frying (day 0 to 5). Oil C had the least stability in terms of deep-fat frying due to a high level of unsaturated fatty acids. Conversely, oil AC had the best stability due to the smallest reduction of the C18:2/C16:0 ratio and the IV.

Determination of the Physicochemical Changes in the Different Vegetable Oils after Fat-Product Interaction During Frying Process

Determination of changes in physicochemical properties of different vegetable oils (sunflower, corn, hazelnut, palm, and olive oils)  was aimed after the frying process with different frying material used (potato and pepper). The increase in free fatty acid content, peroxide value, viscosity and polar compound formation of oils was observed, while the reduction of the polyunsaturated fatty ...

Designation of a Palm-Free Frying Oil Formulation Based on Sunflower, Canola, Corn and Sesame Oils Using D-Optimal Mixture Design

Background and Objectives: Oils used in frying should include special characteristics such as high oxidative stability, prolonged shelf life, low price, abundance and availability and desirable flavors. Nowadays, consumers are further interested in low saturated frying oils.  Recently, manufacturers focus on eliminating palm oil derivatives (as a major vegetable source of saturation) from fryin...

Effect of Deep-Fat Frying on Physicochemical Properties of Rice Bran Oil Blends

Rice bran oil, non conventional oil was blended with six traditional oils in the ratio of 70:30 and 80:20 for the enhancement of its market acceptability and awareness in consumers regarding its use in cooking. Effect of deep-fat frying on these blends was studied by assessing the changes in percent fat absorption and physicochemical properties during repeated frying process (three times). The ...

The Effect of Hydrogenation on Physical and Chemical Characteristics of Soyabean Oil

Hydrogenation of oils might be considered as the largest reaction in the edible oil industry. The reaction consists of the addition of hydrogen at the double bounds of fatty acids. Although for some reasons this might be considered a desirable reaction but for some others it might create problems in the food and nutrition chain circle due to the formation of saturated and trans fatty acids. Soy...

Predicting the higher heating values of waste frying oils as potential biodiesel feedstock

In the literature, there are several empirical models to estimate the higher heating values of vegetable oils and biodiesel fuels. In this study, five of these models found in the literature were used to estimate the higher heating value of waste frying oils. When some models are used to estimate HHVs of waste frying oils, the relative errors were found up to 5% compared to the values obtained ...
